Dietary Requirements
In short, I don't eat sandwiches or pizza or red meat or cheese. I'm not vegetarian or vegan. I'm not violently allergic to any foods - just sensitive/intolerant enough to make me uncomfortable and distracted and unable to sleep well.
Though that sounds restrictive I'm basically good with foods that are fresh, freshly cooked and not too complicated. Salads (no vinaigrette), vegetables (no stock cubes), grains (no wheat), beans and pulses are all fine. I also do fish (not for an evening meal but lunch is fine) and (preferably organic) chicken/duck.
IMPORTANT: I avoid all foods that are moldy, fungusy, have mold or promote mold. I have a strong intolerance to milk/cheese, alcohol/fermented foods, vinegar/soy sauce, sugars/fruit/honey and yeast/bread/mushrooms/mold/fungus. I have a mild intolerance to tofu, butter, wheat/pasta and nuts. I avoid preserved foods as they generally contain sugars/vinegar/mold.
Foods that are OK for me:
- Fish (for lunch only) and fowl including chicken and duck (preferably organic)
- Prefer everything organic (better for me and the environment)
- Salad and avocados - but no vinegar nor mayonnaise
- Olive oil - sunflower/vegetable oils OK too
- Avocados
- Vegetables: all types good apart from mushrooms
- Grains all good (except wheat) including rice, millet, quinoa, buckwheat, amaranth and oats
- Beans (not 'baked beans' though because they have sugar in) and pulses are all good
- Freshly roasted sunflower seeds OK - other nuts/seeds NOT OK
- Miso OK
- Coconut
- Lemons are OK
- Olives - if well cooked
- Eggs occasionally OK
- Fresh and freshly cooked produce
- Mild fresh chilli is OK
Foods I try to avoid:
- All dairy: cheese, milk, and yogurt - eggs occasionally OK
- All red meats including beef, lamb and pork
- Monosodium Glutamate and all other additives and preservatives
- Vegetable bouillon powder (like Marigold) contains yeast
- Yeast: bread and stock cubes
- Fermented foods: soy sauce, pickled and preserved foods
- Vinegar: cider, wine or balsamic
- All fruit (fresh and dried) - but lemons are OK
- All sugars (natural and refined) including honey, chocolate and fruit sugar
- All non-fermented soya products: tofu and soya milk - miso is OK
- 'Hot' spiced foods - but mild fresh chilli is OK
- Most refined and processed foods
- Nuts and seeds - freshly roasted sunflower seeds OK
- Mushrooms
- Olives if not well cooked
- Wheat
Cooking methods I want to avoid:
- Microwave
- Deep fat frying
